According to this Wikipedia entry, brewing mainly related to how water first introduced with coffee. Based on this, there are four main techniques:

  • Decoction (through boiling)
  • Infusion (through steeping)
  • Gravitational feed (used with percolators and in drip brewing)
  • Pressurized percolation (with espresso)
